I don't manage it every week, but I try to make the egg muffins that Kim posted about a while back. I can make a batch on the weekend and then just heat up a few each day. I am always in a rush in the morning and usually quick food = unhealthy food so this helps me do better.

My issues are a bit different. Due to other health problems I need a fair amount of protein in the morning. The problem is that I cannot stand the smell of anything cooking that early. I will be sick all day long. So I often end up in a drive thru for breakfast. But I have been known to eat a peanut butter sandwich & be quite happy with it for breakfast.

I say blaze your own trail, my friend. :)

Bob, this is a big problem for so many of us with diabetes. About a 18 months ago I started the four hour body diet. It has made a huge difference for me and has allowed me to stop insulin injections.

For my breakfast I make an egg dish - usually one egg and equivalent of two more from egg whites. This gives me the flavor I want and the protein I need. For my carbs I opt for a slow carb dish, usually based on lentils or dal. I make a big batch - add some sausage into it sometimes, tomato sauce, etc. I eat about a cup of this. Sometimes I will add a veggie like spinach, or something else I like.

What this does for me is fill my gut until lunch time, give me the carbs that I need but in a low GL form so my BG doesn't spike. In fact, my post meal BG is always lower than pre-meal with this breakfast.

I wrote a blog post a long time ago about it. I've evolved my recipe for the lentils dish over time, and often I just fry my eggs in grapeseed oil and eat the lentils on the side. Still, this post this will give you an idea:

Good luck with it.
